                        Jelly Marshmallow
Dissolve jelly crystals in 1/2 cup boiling water put aside.
Place 1 cup caster suger in  a bowl with 1/2 cup of cold water and beat with an electric beater for 3 minutes. Pour jelly into suger mixture. Beat on high speed for 10-15 minutes until thick and creamy.
Pour into chilled shallow container, place in fridge until set. cut into squares and roll in desiccated coconut.
Then eat.
