Pancakes

Ingredients

1 cup of champion grade flour
pinch of salt
1 egg
1 cup of milk
butter to grease
                                                                                                                            

1  Sift flour and salt into a bowl. Add egg and mix lightly with a fork.

2  Gradually add milk, mixing constantly until smooth with a wooden
    spoon.

3  Cover with plastic food wrap and refrigerate for 1 hour-the batter will
    thicken.

4  Grease a small frying pan with butter. Heat pan. Pour in enough batter
     to just cover the base of the pan.

5  Cook for about 2 minutes until golden on the underside.

6  Turn and cook the other side. Keep warm while cooking the remaining
    pancakes. makes about 6-8 pancakes.
